Bruschetta!

Saturday involved another trip to the Kootenai County Farmers Market. I had $9 in my pocket and an open mind of what to get. My usual favorite stand was being swarmed by customers like vultures on a fresh carcass, so I had to search around for a different stand, and therefore, unknown possibilities. I saw a stand called "The Tomato Lady" and thought to myself, "Hey, tomatoes grown by your average Idahoan lady are probably pretty amazing" and got in line for her stand while scoping out the goods. Off to the right I saw a basket filled with little purpley onion looking things and when I got closer saw they were labeled shallots. Never having cooked with shallots in my life, it is only natural that I purchased two. Along with two tomatoes, some of the biggest, baddest tomatoes on the block. Er, stand.

When I got home I Googled shallot recipes and found this one: Bruschetta with Shallots. Simple name, amazing recipe.

So, my friends, I'm going to give a tutorial on how to make this delicious snack, appetizer, or hors d'oeuvres for parties!

First this is what you need: French bread (the recipe says Italian, but this was $0.68 and works fine), shallots, tomatoes, garlic, lemon juice, salt & pepper, and olive oil.



Next, chop your tomatoes, then your shallots and some garlic.


Oh yeah. You also need basil. Luckily, I had the fresh stuff from my garden!


Mix all those things together with your s&p, some olive oil, and lemon juice.


Put your mixture in the fridge to chill and go watch some HGTV.

Next, chop some MORE garlic for infusing your olive oil that's going to be used for brushing your bread. Hey, I never said your breath was going to smell minty fresh when this was all over with.


While that garlic is simmering in the oil, cut some bread and broil them. Watch carefully so they don't burn!!


Once your bread is toasted, brush on some of the garlicy olive oil and then your tomato mixture.



Don't those bad boys look great? They look so good in fact, that a few minutes after serving them, this is what happens.

  1. Watch out Food Network! I'm so jealous of your Farmer's Market experience! I tried to find Fargo's on Saturday and after driving around for 20 minutes, gave up. I love the variety and freshness they offer. My favorite item: fresh green beans. We always cook ours on the grill. I could probably eat it everyday! Thumbs up to you for trying something new!
