Healthy Chili Rellenos!

Yesterday at the farmers market, as I was distressed about my favorite stand no longer having shell peas, I came across fresh, organic poblano peppers. I have never cooked with them before, but they looked interesting and really good. I bought two, and decided to make chili rellenos for dinner.

When I got home, I started looking online at recipes. The most popular and most authentic looking varieties were insanely high in fat and calories (like 700+ for one pepper!), so I decided to make my own recipe, using Rachael Ray and Kath Eats as guides. 

 Ingredients (makes 4):

½ c. water
½ c. instant brown rice
2 poblano peppers
¼ c. chopped onion
2 garlic cloves, chopped
½ c. refried beans (I used vegetarian)
8 oz stewed or diced tomatoes
½ tbsp canola oil
Chili pepper to taste (I used a hot banana plus a habanero pepper = SPICY!!)
Cheese of choice

These bad boys are the most important!


1. Broil the poblanos on a cookie sheet until the skins are charred on all sides.
2. Bring water to a boil and add rice, simmer until water has absorbed.
3. Add oil to a pan, sauté onion, chili, and garlic until slightly brown and tender.
4. Add tomatoes and spices to pan.
5. In a medium sized bowl, place refried beans. When tomato mixture is to desired completeness, add to beans. Add rice when done. Still all together.
6. Slice poblanos down the center, but not in half. Scoop out seeds. Place in baking dish.
7. Scoop bean and rice mixture into peppers. Top with cheese. 

8. Broil peppers, mixture, and cheese until cheese is completely melted.
9. Have a beer and ENJOY!

This meal was SO GOOD. Mine were very spicy,so add less chili pepper if you don't want these to burn your face off. I figured out the stats, and these have about 250 calories per pepper. Not bad! Since I only had 2 poblanos, I'm going to use my extra rice and bean mixture to make enchiladas today. Yay for Mexican!


  1. That does look really really good - actually your pictures are totally cooking book worthy! And what's best is that SJ and I can steal your recipes and eat them. We tried veggie Sloppy Joe's for dinner and it was a little runny but ok.

  2. Hi Shannon - need to come to Nex Mexico for some real "Mexican" food...the question here is "red or green"? You are all grown up talking about recipes & gardening (makes me feel old)! Looks like you are loving CdA...Quail and I have talked about touring that area on the Harley (but probably not until after Reece graduates 2012). Is always fun to site see with an expert. All is well here - mostly work and lake on the weekends. You should come to visit - not only for the Mexican food but some place new to see.
